Mushroom Farm Automation - Connecting CO2 probe to an ESP32 and Home Assistant

I've stripped the CO2 probe out of my mushroom fruiting chamber to get that transitioned over to Home Assistant running of the Pi. It connects to the Pi, via an ESP32, and a 4-20ma MCP3428 receiver board.

I made a big mistake, and didn't check the outputs on my Dwyer CDD, and thinking it was 4-20ma, I went ahead with the build, only to find later on that it's analog output is actually 0-10vdc! So I cannot use the MCP3428 board with the Dwyer CDD. I can get a MCP3428 which has a 0-10vdc input, but I am unsure if I will go down that route or just get a different CO2 sensor.

This is just the beginning of my Mushroom farm Automation, and there is a lot more work to be done.

It took me around 25 hours to get this far. I am teaching myself everything, and previously didn't know anything about yaml, c++, or Arduino coding. It's been a very steep learning curve for me.
